- 1 lb Italian sausage, casings removed
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- 1/2 cup parmesan cheese, grated
- 2 cups low-carb marinara sauce
- 3 cups fresh spinach, chopped
- 1 tsp dried oregano
- Fresh basil for garnish
Instructions
- Brown the Italian sausage in a skillet until cooked through.
- Sauté chopped spinach in the same pan until wilted.
- Mix ricotta and half of the parmesan in a bowl.
- Layer sausage and spinach in a greased 9×9 baking dish.
- Spread marinara sauce evenly over the meat and spinach.
- Dollop the ricotta mixture on top and swirl gently.
- Top with mozzarella and remaining parmesan.
- Bake at 400°F for 20-25 minutes until golden brown.
