- 4 medium zucchinis
- 1 lb lean ground beef
- 2 cups shredded Pepper Jack cheese
- 1 cup plain Greek yogurt
- 2 tbsp fresh lime juice

- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F.
- Halve zucchinis lengthwise and scoop out the centers to create boats.
- Brown ground beef in a skillet over medium-high heat until cooked through.
- Stir in cumin, smoked paprika, salt, and pepper; cook for 3 minutes.
- Fill zucchini boats with the beef mixture and top with shredded Pepper Jack cheese.
- Bake for 20 minutes until the zucchini is tender and cheese is bubbly.
- Mix Greek yogurt and lime juice together; drizzle over the hot boats.
