- 3–4 lbs beef brisket
- 2 tbsp finely ground coffee
- 2 tbsp chili powder
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 large yellow onions, sliced
- 2 Granny Smith apples, cubed
- 2 tbsp cooking oil
- Salt and pepper to taste
Instructions
- Season brisket with salt and pepper, then sear in oil over high heat until browned on both sides.
- Mix coffee, chili powder, brown sugar, and vinegar into a smooth glaze.
- Place sliced onions and apple chunks at the bottom of the slow cooker.
- Set the seared brisket on top of the onions and apples.
- Coat the beef thoroughly with the coffee-chili glaze.
- Cook on Low for 8-10 hours or High for 5-6 hours.
- Stir the juices with the apples and onions before serving.
