- 1 lb large shrimp, peeled and deveined
- 1 large English cucumber, sliced
- 1/4 cup fresh dill, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 2 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Poach shrimp in simmering water for 3 minutes, then chill in an ice bath.
- Salt cucumber slices, let sit for 10 minutes, then pat dry.
- Whisk olive oil, lemon juice, and minced garlic until emulsified.
- Combine chilled shrimp and cucumbers in a large bowl.
- Fold in chopped dill and season with pepper.
- Refrigerate for 30 minutes before serving.
