- 12 oz fusilli pasta
- 2 ripe avocados
- 3 tbsp fresh lime juice
- 2 tbsp olive oil
- 1/2 cup diced red onion
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
- Cook pasta in salted water until al dente, drain, and rinse with cold water.
- Mash avocados in a bowl until mostly smooth.
- Whisk in lime juice, olive oil, salt, and pepper until creamy.
- Add the cooled pasta to the bowl with the avocado dressing.
- Fold in red onions, cherry tomatoes, and chopped cilantro.
- Toss gently until evenly coated and serve chilled.
