- 1 lb chicken breast, sliced into strips
- 4 oz pancetta or guanciale, diced
- 12 oz spaghetti
- 1 cup finely grated Parmesan cheese
- 3 large eggs, room temperature
- 1 tbsp freshly cracked black pepper
- Salt for pasta water
Instructions
- Boil a large pot of salted water and cook spaghetti until just shy of al dente.
- Sauté diced pancetta in a large skillet over medium heat until crispy.
- Add chicken strips to the skillet and sear until golden brown and cooked through.
- Whisk eggs, grated Parmesan, and black pepper in a bowl until a thick paste forms.
- Transfer cooked pasta directly into the skillet with chicken and pancetta.
- Turn off the heat and quickly stir in the egg and cheese mixture.
- Add a splash of pasta water if needed to reach a glossy, creamy consistency.
