Description
A rich, smoky potato soup thickened naturally by mashing a portion of the potatoes. Topped with crispy bacon for a salty crunch.

- 6 strips thick-cut bacon, diced
- 3 large Russet potatoes, peeled and cubed
- 1 yellow onion, finely diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1/2 cup heavy cream
- Salt and black pepper to taste
Instructions
- Sear bacon in a large pot until crisp; remove bacon and keep fat.
- Sauté onion and garlic in the bacon fat until soft.
- Deglaze the pot with a small amount of broth.
- Add cubed potatoes and the rest of the broth.
- Simmer for 20 minutes until potatoes are tender.
- Mash a small portion of potatoes into the soup to thicken.
- Stir in heavy cream and simmer for 2 more minutes.
- Fold in the cooked bacon and season with salt and pepper.
