Description

A rich, smoky potato soup thickened naturally by mashing a portion of the potatoes. Topped with crispy bacon for a salty crunch.


Ingredients

  • 6 strips thick-cut bacon, diced
  • 3 large Russet potatoes, peeled and cubed
  • 1 yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. Sear bacon in a large pot until crisp; remove bacon and keep fat.
  2. Sauté onion and garlic in the bacon fat until soft.
  3. Deglaze the pot with a small amount of broth.
  4. Add cubed potatoes and the rest of the broth.
  5. Simmer for 20 minutes until potatoes are tender.
  6. Mash a small portion of potatoes into the soup to thicken.
  7. Stir in heavy cream and simmer for 2 more minutes.
  8. Fold in the cooked bacon and season with salt and pepper.
