Instructions

- Combine peaches, sugar, cinnamon, nutmeg, and vanilla in a saucepan; cook until softened, about 5‑7 minutes.
- Whisk flour, almond flour, baking powder, cold butter, and milk until dough forms; spread thin on a baking sheet.
- Bake crumble until golden brown, about 20 minutes; cool slightly.
- Layer each glass with peach compote, crumble, Greek yogurt, honey, and a mint leaf.
- Refrigerate for at least 2 hours before serving.
