- 2 cups fresh butternut squash, roasted
- 1/2 cup fresh sage leaves, chopped
- 2 cups all-purpose flour
- 2 large eggs

Instructions
- Preheat oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, drizzle with olive oil, and season with salt and pepper. Roast for about 40 minutes until tender.
- Scoop out the flesh into a bowl and mix with sage and Parmesan until smooth.
- In another bowl, combine flour and salt. Make a well, add eggs, and mix until combined. Knead for 5-7 minutes until smooth.
- Roll out dough thinly, fill with spoonfuls of the filling, seal edges with water, and cut into ravioli shapes.
- Boil salted water in a large pot; cook ravioli until they float (about 3-4 minutes). Serve hot topped with butter or sage sauce.
