- 1 cup finely grated zucchini (squeezed)
- 1/2 cup softened unsalted butter
- 3/4 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350F and line a baking sheet with parchment.
- Cream together butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Fold in the squeezed, grated zucchini.
- Stir in flour, baking soda, and salt until just combined.
- Fold in the chocolate chips.
- Scoop 2-tablespoon portions onto the sheet.
- Bake for 12 minutes or until edges are golden.
