  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 medium onion, diced
  • 4 oz fresh goat cheese, crumbled
  • 2 tsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (thyme or basil) optional

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust and fit it into a 9-inch pie dish. Prick the bottom with a fork.
  3. In a skillet, heat olive oil over medium heat; sauté the diced onion until translucent. Add spinach and cook until wilted. Remove from heat.
