- 4 oz fresh goat cheese, crumbled
- 2 tsp olive oil
- Salt and pepper to taste
- Fresh herbs (thyme or basil) optional
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and fit it into a 9-inch pie dish. Prick the bottom with a fork.
- In a skillet, heat olive oil over medium heat; sauté the diced onion until translucent. Add spinach and cook until wilted. Remove from heat.
- In a mixing bowl, whisk together eggs, heavy cream, salt, pepper, and herbs until combined.
