  • 4 cups Romaine Lettuce, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cheddar Cheese, shredded
  • 1 can (15 oz) Black Beans, drained and rinsed
  • 1 cup Corn, canned or frozen
  • ½ cup Sour Cream
  • ½ cup Salsa
  • 1 packet Taco Seasoning (about 1 oz)
  • Optional: Avocado slices, jalapeños, cilantro for garnish

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Drain excess fat if necessary.
  2. Stir in taco seasoning and water as per package instructions; let simmer until thickened.
  3. In a large bowl, place chopped Romaine lettuce as the base.
  4. Layer cooked ground beef, black beans, corn, cherry tomatoes, and cheddar cheese on top of the lettuce.
  5. In a small bowl, mix sour cream with salsa for drizzling over the salad.
