A refreshing and vibrant summer salad combining crisp English cucumbers and juicy cherry tomatoes, tossed in a creamy, tangy lemon poppy seed vinaigrette.

- 1 large English cucumber, sliced into half-moons
- 1 pint cherry tomatoes, halved
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 1 tbsp poppy seeds
- Salt and black pepper to taste
Instructions
- Slice cucumbers and toss with a pinch of salt; let sit for 5 minutes, then rinse and pat dry.
- Halve the cherry tomatoes and place them in a large mixing bowl with the cucumbers.
- In a separate small bowl, whisk together honey and lemon juice.
- Slowly whisk in the olive oil until the dressing is emulsified.
- Stir in the poppy seeds and season with salt and pepper.
- Pour the dressing over the vegetables and toss gently to coat.
- Chill for 15 minutes before serving.
