Ingredients

  • 1 lb cooked salmon fillet, chilled and flaked
  • 1 large English cucumber, sliced into half-moons
  • 1/4 cup red onion, finely diced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Slice the English cucumber into thin half-moons and place in a large mixing bowl.
  2. Add the finely diced red onion to the bowl with the cucumbers.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
  4. Pour the dressing over the cucumbers and onions, tossing gently to coat.
  5. Add the flaked chilled salmon and chopped fresh dill to the bowl.
  6. Fold everything together gently with a spatula to avoid breaking the salmon flakes.
