Ingredients

  • 3 medium zucchinis, sliced into rounds
  • 2 cups marinara sauce (no sugar added)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 1 tablespoon salt (for sweating zucchini)

Instructions

  1. Salt zucchini slices and let sit for 30 minutes, then rinse and pat dry.
  2. Roast zucchini slices at 400°F for 15 minutes.
  3. Sauté minced garlic in olive oil until fragrant.
  4. Spread a layer of marinara in a baking dish.
  5. Layer roasted zucchini, more sauce, and a blend of mozzarella and parmesan.
  6. Bake at 400°F for 20 minutes until cheese is golden brown.
