- 1 lb ground turkey
- 1 cup long-grain white rice
- 3 cups chopped kale, stems removed
- 6 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat and brown the ground turkey until cooked through.
- Add diced carrots and celery to the pot; sauté for 5 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring the mixture to a boil.
- Add rice, reduce heat to low, cover, and simmer for 15-18 minutes.
- Stir in chopped kale and cook for 3 more minutes until wilted. Season with salt and pepper.
