Description

A hearty, comforting soup that tastes exactly like traditional stuffed cabbage rolls but without the tedious rolling. Slow-cooked to perfection with beef, cabbage, and rice.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 small head of green cabbage, chopped into 1-inch ribbons
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 cup uncooked white rice
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef and diced onions in a skillet over medium-high heat until cooked through. Drain excess grease.
  2. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  3. Transfer the meat mixture to the slow cooker. Stir in tomato paste, Worcestershire sauce, and diced tomatoes.
  4. Pour in the beef broth and stir until combined. Cover and cook on LOW for 4 hours.
  5. Stir in the chopped cabbage and cook on LOW for another 2 to 3 hours until cabbage is tender.
  6. Add the uncooked white rice and cook for one final hour on LOW, or until rice is tender.
