- 1 lb dried black eyed peas, rinsed
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 6 cups vegetable broth
- 1 tbsp apple cider vinegar
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Rinse the dried black eyed peas thoroughly in a colander.
- Sauté diced onion and minced garlic in a pan until translucent.
- Place the sautéed onion and garlic into the slow cooker.
- Add the rinsed peas, smoked paprika, cayenne, salt, and pepper to the pot.
- Pour in the vegetable broth and stir to combine.
- Cover and cook on Low for 8 hours or High for 4-5 hours.
- Stir in apple cider vinegar and adjust seasoning before serving.
