Description

A comforting, smoky, and spicy black eyed pea stew prepared in a slow cooker for maximum tenderness and flavor depth.


Ingredients

  • 1 lb dried black eyed peas, rinsed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tsp cayenne pepper
  • 6 cups vegetable broth
  • 1 tbsp apple cider vinegar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Rinse the dried black eyed peas thoroughly in a colander.
  2. Sauté diced onion and minced garlic in a pan until translucent.
  3. Place the sautéed onion and garlic into the slow cooker.
  4. Add the rinsed peas, smoked paprika, cayenne, salt, and pepper to the pot.
  5. Pour in the vegetable broth and stir to combine.
  6. Cover and cook on Low for 8 hours or High for 4-5 hours.
  7. Stir in apple cider vinegar and adjust seasoning before serving.
