- 1.5 cups graham cracker crumbs
- 6 tbsp melted unsalted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 3 Granny Smith apples, peeled and diced
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 325F (160C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs with melted butter and press firmly into the bottom of the pan.
- Beat cream cheese and sugar until smooth, then mix in eggs one by one and stir in vanilla.
- Sauté diced apples with cinnamon and a bit of brown sugar in a pan until tender.
- Pour cheesecake batter over the crust and top with the sautéed apples.
- Combine oats, flour, brown sugar, and cold butter in a bowl until crumbly, then sprinkle over the apples.
- Bake for 50-60 minutes until the edges are set but the center still jiggles slightly.
- Cool in the oven with the door ajar for 30 minutes, then refrigerate for at least 6 hours.
