  • 2 lbs beef chuck or brisket, cut into bite-sized pieces
  • 1 can (14 oz) full-fat coconut milk
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 ripe tomatoes, diced
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the beef with salt and pepper. Heat oil in a large pot over medium-high heat and brown the beef on all sides. Remove from the pot.
  2. In the same pot, add chopped onions and sauté until golden brown. Add garlic and ginger; cook until fragrant.
  3. Stir in tomatoes along with cumin seeds, coriander powder, turmeric powder, and red chili powder. Cook until tomatoes soften.
  4. Return the browned beef to the pot; pour in coconut milk and stir well. Bring to a gentle simmer over low heat.
  5. Cover partially and let simmer for about two hours or until beef is fork-tender, stirring occasionally.
  6. Serve hot garnished with fresh cilantro alongside steamed rice or naan.
