  • 1 ¾ cups powdered sugar
  • 3 large egg whites (room temperature)
  • ¼ cup caster sugar
  • Red and green food coloring (gel recommended)
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • ½ cup butter (softened)
  • 2 cups powdered sugar (for buttercream)

Instructions

  1. Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl.
  3. In another bowl, whip egg whites until soft peaks form. Gradually add caster sugar and continue whipping until stiff peaks develop.
  4. Fold the dry ingredients into the whipped egg whites gently until the batter flows slowly off the spatula.
  5. Divide the batter into two bowls; color one red and one green with food coloring. Pipe circles onto prepared baking sheets.
  6. Let piped macarons rest at room temperature for 30 minutes to form a skin.
  7. Bake for 15-18 minutes until they lift easily from parchment paper. Cool completely before filling with buttercream.
