- 1 lb ground turkey (93% lean)
- 1 medium zucchini, grated and squeezed dry
- 1/2 cup Panko breadcrumbs
- 1/3 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Grate zucchini and squeeze out excess water using paper towels.
- In a bowl, combine turkey, zucchini, breadcrumbs, Parmesan, garlic, salt, and pepper.
- Roll mixture into 1-inch balls.
- Heat olive oil in a skillet over medium heat.
- Brown meatballs for 3-4 minutes per side until golden.
- Cover and cook for an additional 5 minutes until internal temp reaches 165°F.
