- 2 boneless skinless chicken breasts, cubed

- 1 cup shredded sharp parmesan cheese

- Salt and cracked black pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400°F.
- Toss potato halves with olive oil, minced garlic, salt, pepper, and thyme.
- Season chicken with olive oil, garlic powder, salt, and pepper.
- Arrange chicken and potatoes on a sheet pan.
- Bake 25‑30 minutes, flipping potatoes midway.
- Sprinkle parmesan over chicken, return to oven 3‑4 minutes until browned.
- Optional: finish under broiler for 1 minute for extra crispness.
- Garnish with parsley and serve hot.
