Ingredients

  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple (with juice)

Instructions

  1. Preheat oven to 350°F and grease two 9-inch cake pans.
  2. Beat oil and brown sugar until smooth, then add eggs one by one.
  3. Stir in vanilla and cinnamon until well combined.
  4. Whisk flour and baking soda together, then fold into the wet ingredients until just combined.
  5. Gently stir in grated carrots and crushed pineapple.
  6. Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean.
  7. Cool in pans for 10 minutes before transferring to a wire rack to cool completely.
