Instructions
- Preheat oven to 350°F and grease two 9-inch cake pans.
- Beat oil and brown sugar until smooth, then add eggs one by one.
- Stir in vanilla and cinnamon until well combined.
- Whisk flour and baking soda together, then fold into the wet ingredients until just combined.
- Gently stir in grated carrots and crushed pineapple.
- Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean.
- Cool in pans for 10 minutes before transferring to a wire rack to cool completely.
