Description

A perfect hybrid of banana and zucchini bread, featuring a tender crumb and a sweet, aromatic cinnamon honey glaze.


Ingredients

  • 3 overripe bananas, mashed
  • 1.5 cups grated zucchini, squeezed dry
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup honey (for glaze)
  • 2 tbsp melted butter (for glaze)
  • 1/2 tsp cinnamon (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash bananas in a large bowl and mix with brown sugar and melted butter.
  3. Stir in grated zucchini and vanilla extract.
  4. Sift in flour, baking soda, cinnamon, and salt. Fold together until just combined.
  5. Pour batter into the pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. Whisk honey, butter, and cinnamon together for the glaze.
  7. Pour the glaze over the warm bread and let it set before slicing.
