- 6 large eggs
- 1/2 cup plain Greek yogurt
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped cilantro
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1 small jalapeño, seeded and finely diced
- 1 garlic clove, minced
- 1 tablespoon mayonnaise (optional)
- Salt and pepper to taste
- Tortilla chips, crushed, for garnish (optional)
Instructions
- Place eggs in a saucepan, cover with cold water, and bring to a boil.
- Reduce heat, remove from flame, cover, and let stand for 10 minutes.
- Transfer to ice water for 5 minutes, then peel.
- Halve each egg lengthwise and remove yolks into a bowl.
- Mash yolks and stir in Greek yogurt, lime juice, cilantro, cumin, smoked paprika, jalapeño, garlic, mayo, salt, and pepper until smooth.
- Fill the egg whites with the mixture using a spoon or piping bag.
- Refrigerate at least 15 minutes before serving.
