A comforting, one-pot meal featuring crispy breaded chicken and penne pasta simmered in a rich, cheesy tomato sauce.

- 1.5 lbs chicken breast, cubed
- 1 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 28 oz crushed tomatoes
- 12 oz penne pasta
- 4 cloves garlic, minced
- 1 handful fresh basil
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Coat chicken in Panko and Parmesan; fry in olive oil until golden brown.
- Remove chicken and set aside.
- Sauté garlic in the same pan until fragrant.
- Stir in crushed tomatoes and bring to a simmer.
- Add dry penne, cover, and simmer for 10-12 minutes until al dente.
- Stir in remaining cheese and basil, then fold in the fried chicken.
