- 4 (6oz) Salmon Fillets
- 3 tbsp Unsalted Butter, softened
- 1/3 cup Basil Pesto
- 1 Lemon (zested and juiced)
- Kosher Salt to taste
- Freshly cracked Black Pepper to taste
Instructions
- Pat salmon fillets dry and season with salt and pepper.
- Combine softened butter and pesto in a small bowl until smooth.
- Heat oil in a skillet over medium-high heat.
- Sear salmon skin-side down for 4-5 minutes until crisp.
- Flip fillets and add a dollop of pesto butter to each.
- Baste with melting butter for another 3 minutes.
- Finish with a squeeze of fresh lemon juice and rest for 2 minutes.
