Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup unfiltered apple cider
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 2 cups shredded cabbage
  • 1 Granny Smith apple, julienned
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Sear chicken skin-side down in an oven-safe skillet until golden.
  3. Flip chicken and add minced garlic and sage to the pan.
  4. Whisk apple cider and Dijon mustard, then pour over the chicken.
  5. Roast in the oven at 400°F for 20-25 minutes until glaze is thick.
  6. Mix shredded cabbage, julienned apple, olive oil, and vinegar for the slaw.
  7. Serve the glazed chicken topped with the fresh, crunchy slaw.
