- 2 lbs bone-in, skin-on chicken thighs
- 2 cups classic Coca Cola
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp toasted sesame oil
- 1 tbsp vegetable oil
- Fresh green onions and sesame seeds for garnish
Instructions
- Heat vegetable oil in a skillet over medium-high heat and sear chicken skin-side down until golden brown (about 6 minutes).
- Remove chicken and sauté minced garlic and grated ginger in the same pan for 1 minute.
- Deglaze the pan with a splash of Coca Cola, scraping up all the browned bits from the bottom.
- Place seared chicken in the slow cooker and pour over the pan drippings, remaining Coca Cola, soy sauce, and brown sugar.
- Cook on Low for 6-8 hours or High for 3-4 hours until the chicken is tender.
- Remove chicken and strain the liquid into a saucepan; boil over high heat for 10-15 minutes until reduced to a thick syrup.
- Toss the cooked chicken in the reduced glaze until fully coated and serve immediately.
