Instructions
- Boil the eggs: Place the eggs in a saucepan, cover with cold water, and bring to a boil. Cover, remove from heat, and let sit for 12-15 minutes. Transfer to an ice bath to cool.
- Prepare the filling: Peel the cooled eggs under running water. Slice in half lengthwise and scoop out yolks into a bowl. Mix yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Assemble the eggs: Fill each egg white half with the yolk mixture using a piping bag or spoon for presentation.
- Create eyeballs: Halve black olives and place one half on each filled egg. Slice pimiento-stuffed olives into small pieces and arrange around black olives for added effect.
- Chill before serving: Cover and refrigerate for at least 30 minutes before serving.
