- 1 cup orzo pasta
- 2 cups water
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1 cup cubed feta cheese
- 1/4 cup chopped fresh basil
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon sea salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
Instructions
- Boil the orzo in salted water until al dente, then rinse under cold water and drain.
- Sauté minced garlic in olive oil until fragrant but not browned.
- Whisk together lemon juice, olive oil, salt, and pepper to make the dressing.
- Toss the rinsed orzo with the dressing, then add cucumber, tomatoes, and olives.
- Fold in feta and basil, then season to taste.
- Refrigerate for at least 30 minutes before serving chilled.
