- 4 salmon fillets (6oz each)
- 1 cup quinoa, rinsed
- 2 cups vegetable or chicken broth
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 3 tbsp honey
- 2 tbsp sriracha
- 2 tbsp soy sauce
- 1 tbsp grated fresh ginger
- 2 tbsp olive oil
- Green onions for garnish
Instructions
- Sauté diced onions and garlic in a pot until translucent.
- Add rinsed quinoa to the pot, stir to coat in oil, then add broth.
- Simmer quinoa for 15 minutes until fluffy; keep warm.
- Whisk honey, sriracha, soy sauce, and ginger in a small bowl.
- Heat oil in a skillet over medium-high heat until shimmering.
- Sear salmon skin-side down for 4-5 minutes until crispy.
- Flip salmon and cook for 3 minutes more.
- Pour glaze into the pan, basting the salmon for 1 minute until sticky.
- Serve salmon atop a bed of dirty quinoa and garnish with green onions.
