Description

Ingredients

Scale
  • 4 salmon fillets (6oz each)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable or chicken broth
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 3 tbsp honey
  • 2 tbsp sriracha
  • 2 tbsp soy sauce
  • 1 tbsp grated fresh ginger
  • 2 tbsp olive oil
  • Green onions for garnish

Instructions

  1. Sauté diced onions and garlic in a pot until translucent.
  2. Add rinsed quinoa to the pot, stir to coat in oil, then add broth.
  3. Simmer quinoa for 15 minutes until fluffy; keep warm.
  4. Whisk honey, sriracha, soy sauce, and ginger in a small bowl.
  5. Heat oil in a skillet over medium-high heat until shimmering.
  6. Sear salmon skin-side down for 4-5 minutes until crispy.
  7. Flip salmon and cook for 3 minutes more.
  8. Pour glaze into the pan, basting the salmon for 1 minute until sticky.
  9. Serve salmon atop a bed of dirty quinoa and garnish with green onions.
