Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 3 tbsp white miso paste
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tbsp freshly grated ginger
  • 2 cups jasmine rice
  • 2 tbsp vegetable oil
  • Optional: Scallions and sesame seeds for garnish

Instructions

  1. Cook jasmine rice according to package directions.
  2. Heat oil in a large skillet over medium-high heat and sear chicken thighs until golden brown on both sides.
  3. In a bowl, whisk together miso paste, brown sugar, soy sauce, and grated ginger.
  4. Pour the glaze over the chicken in the pan and reduce heat to medium.
  5. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens into a sticky glaze.
