Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Grate the zucchini and pat it dry with a clean towel.
  2. In a large bowl, combine flour, cornmeal, Parmesan, parsley, garlic powder, paprika, salt, pepper, and shredded cheddar.
  3. Whisk in the egg and enough olive oil to make the batter cohesive but still loose.
  4. Heat a non‑stick skillet over medium‑high heat and oil it thinly.
  5. Drop spoonfuls of batter onto the skillet and cook until golden on the edges and bottoms, about 2‑3 minutes.
  6. Flip and cook the other side for another 2 minutes until crisp. Serve hot.
