- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup buttermilk
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups powdered sugar (for frosting)
- 4 tbsp softened butter (for frosting)
- 1 tbsp heavy cream (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tray.
- Cream butter and sugar together until pale and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Whisk flour, baking powder, and salt together in a separate bowl.
- Alternate adding dry ingredients and buttermilk to the butter mixture, stirring gently.
- Fill cupcake liners 2/3 full and bake for 18-22 minutes.
- Cool cupcakes completely on a wire rack.
- Whip frosting butter and powdered sugar, then add cream and vanilla until smooth.
