- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup apple cider
- 2 large eggs

- 1 tsp ground cinnamon

- 1/2 cup butter (for caramel)
- 1 cup brown sugar (for caramel)
- 1/4 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream 1/2 cup butter and 1 cup brown sugar until fluffy.
- Beat in eggs one at a time, then stir in 1/2 cup apple cider.
- Whisk flour, baking soda, cinnamon, and salt; fold into the wet batter until just combined.
- Scoop rounded tablespoons onto sheets and bake for 10-12 minutes until set.
- Cool cakes completely on a wire rack.
- For the caramel, melt 1/2 cup butter and 1 cup brown sugar, then stir in heavy cream and simmer for 2 minutes.
- Let caramel cool, then pipe onto one cookie and top with another.
