School is back in session for many of us. I can’t believe how fast summer flew by. We enjoyed every last second of summer in my house and now my kids are paying for it. Getting them up in the morning and out the door to the bus can be a challenge. Are you with me? Well these Greek Yogurt Waffles are to the rescue!
The ADA Mideastand I are teaming up to celebrate back to school and add these waffles to your kids breakfast plate. These are protein packed waffles that use Greek yogurt and milk to give your child energy and keep them full longer in the morning. I love making a double batch of these waffles and saving some in the freeze for later. It is so nice to have frozen waffles ready to pop in the toaster on those extra busy days. Recipe Ingredients You’ll Need |
These simple pantry staples are all you need. See the recipe card below for exact amounts and printable instructions.
- Milk: This recipe uses 2 % milk but you could use any milk you have on hand and it will work.
- Greek Yogurt: The Greek yogurt not only adds protein but helps create a soft, flavorful waffle. I suggest using full fat Greek yogurt if you can but it isn’t necessary. We like to use Fage Greek yogurt for the texture but you can use whatever you have on hand.
- Eggs: This recipe uses 2 large eggs.
- Vanilla: I like adding vanilla extract for flavor but if you don’t have it on hand you don’t have to. The waffles will still taste great!
- Honey: The honey helps to sweeten the waffles slightly.
- Spices: Warm spices of cinnamon and cardamom {optional} is added into the batter. It doesn’t add a strong flavor but a nice hint of warmth. Both of these can be skipped if you want.
Step 1: Mix the Dry Ingredients: In a large mixing bowl combine the flour, baking powder, cinnamon, cardamom {optional}, salt and mix until well combined. Set aside.
Step 2: Mix Wet Ingredients in Mixer: In a Kitchenmaid mixer or a blender combine the milk, yogurt, eggs, vanilla, honey and mix on low until combined.
Step: 3: Add the Dry Ingredients: Slowly add the dry ingredients into the wet ingredients and mix until combined. Don’t over mix the batter or it will be rubbery when you make the waffles.
Step 3: Cook Waffles: Heat a Belgium waffle iron over medium heat until it is heated up and the light goes off. Spray with non-stick spray and pour about 1/3 to 1/2 cup of batter in the middle of the waffle iron. Close the iron and cook until crisp and golden brown, about 4 minutes. Repeat using the remaining batter. Enjoy warm with fresh fruit or freeze the waffles for later.

Store your waffles in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a toaster or oven at 350°F until crispy.

There are so many reasons to love Greek yogurt! Six ounces of Greek yogurt typically contains 14–17 grams of protein. That’s a lot of protein for such a small serving size! (Regular yogurt has between 7–8 grams of protein in 6 ounces). Yogurt can replace oils in recipes for baked goods like muffins, cakes, breads and even pancakes to cut the fat and maintain the moisture! In this recipe the yogurt replaces the butter and oil that might typically be used!
Yes! Store the batter in an airtight container in the fridge. When you are ready to use the batter make sure to whisk it to create a smooth texture again before making the waffles.
Your waffles can become dense if they are overtaxed. I suggest stirring until just combined to keep the waffles light and fluffy. Also, check that your baking powder is fresh for proper leavening.

- 1 1/4 cup 2% milk {or milk of your choice}
- 2/3 cup full fat Greek Yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons honey
