A nutrient-packed, low-carb take on classic shrimp fried rice using riced cauliflower for a light yet savory meal.


Ingredients

  • 4 cups cauliflower rice
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp soy sauce or coconut aminos
  • 1 tbsp toasted sesame oil
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Pat shrimp dry and season with salt and pepper.
  2. Heat vegetable oil in a large skillet over high heat; sear shrimp for 2 minutes per side, then remove and set aside.
  3. Add minced ginger and garlic to the pan and sauté for 30 seconds.
  4. Add cauliflower rice and sauté for 3-5 minutes until golden and tender.
  5. Stir in soy sauce and sesame oil, mixing well to coat the rice.
  6. Return shrimp to the pan, toss in green onions, and heat through for 1 minute.
